Do you need something quick and easy and healthy for dinner? I am always looking for simple and delicious food that comes together quickly for busy weeknights.
This burrito bowl is on regular rotation for us and comes together with pantry staples you probably already have on hand. You can easily customize this recipe for each member of the family and it is healthy and filling.
I start with Cilantro Lime Brown rice. This adds so much flavor to the burrito bowl and is very simple– just Matahama brown rice, fresh lime juice and cilantro.
The rice is a perfect base to the burrito bowl and you can layer whatever flavors you like on top- fresh tomato, pico de gallo, beans, chicken or beef, avocado, corn, onions, cheese and so on.
For my family I typically add black or pinto beans (or both), fresh tomatoes, corn, guacamole, grilled chicken and a lime crema.
For my own burrito bowls, I prefer simple corn, tomato, pinto beans, lime crema, cheese and avocado or guacamole.
Yum!
And my children can’t get enough lime on chicken, rice… everything really. I make this simple lime crema that only takes a second and is so flavorful.
Just sour cream, fresh squeezed lime juice and a bit of lime zest mixed together and drizzled on top of your brown rice burrito bowl. Yummy, healthy and so easy!
- 1 cup brown rice
- 2 cups water or broth
- Juice from half a lime
- 1 teaspoon chopped fresh cilantro
- 6 grape tomatoes, chopped
- 1 bag frozen corn- heated
- avocado, chopped
- beans of your choice, drained and washed
- grilled chicken (optional)
- cheese of your choice (optional)
- ¼ cup sour cream
- juice from half a lime
- zest from lime
- Follow the cooking instructions on the package of rice.
- Once the rice is cooked and fluffy, add lime juice and cilantro and stir well.
- Layer the rice as a the base of the burrito bowl and top with fresh tomatoes, corn, avocado, beans and chicken.
- Mix sour cream, lime juice and zest in a small bowl and drizzled over the top.
- Serve warm.
Couldn’t be faster and easier and the leftovers are delicious for lunch the next day.
