Fresh Brown Rice Burrito Bowls

  • 1 cup brown rice
  • 2 cups water or broth
  • Juice from half a lime
  • 1 teaspoon chopped fresh cilantro
  • 6 grape tomatoes, chopped
  • 1 bag frozen corn- heated
  • avocado, chopped
  • beans of your choice, drained and washed
  • grilled chicken (optional)
  • cheese of your choice (optional)
  • ¼ cup sour cream
  • juice from half a lime
  • zest from lime
  1. Follow the cooking instructions on the package of rice.
  2. Once the rice is cooked and fluffy, add lime juice and cilantro and stir well.
  3. Layer the rice as a the base of the burrito bowl and top with fresh tomatoes, corn, avocado, beans and chicken.
  4. Mix sour cream, lime juice and zest in a small bowl and drizzled over the top.
  5. Serve warm.
