Easy Copycat Chipotle Pico de Gallo Recipe

Copycat Chipotle Pico de Gallo Recipe

Do you love Chipotle? Goodness we do! We don’t get fast food often but if I do it is either Chipotle or In-n-Out for sure.

I have previously posted my very favorite salsa recipe and I thought it would be fun to also post a Pico de Gallo recipe that is so simple. And it tastes just like Chipotle.

Now we are mild kind of people in our house so this is a mild recipe. You can for sure amp it up with more Jalapeno.

Pico de Gallo is just delicious with nachos, tacos, fajitas, quesadillas…. really any Mexican food that you love.  You can also grill chicken with a lime marinade and top with this and it would be delish.

Here is the super easy recipe:

Easy Copycat Chipotle Pico de Gallo recipe.
Ingredients
  • 3-4 Tomatoes, diced
  • ½ Red Onion, diced
  • ¼ Jalapeno, diced
  • 5-7 stems of Cilantro
  • Juice of 1 Lime
  • ¼ tsp Kosher Salt
Instructions
  1. Chop the cilantro finely and add to chopped onion, tomato and Jalapeno.
  2. Gently stir in salt and squeeze juice of lime over the top.
  3. Stir until incorporated but careful not to smash the tomatoes.
  4. Place in fridge for about an hour to marinade the ingredients together.
  5. Enjoy!

Remember the tomatoes are always key in these recipes.  You want a delicious, fresh tomato- I usually make a special trip to the Farmer’s Market or Whole Foods for great tomatoes.  The ones at the grocery store can be mealy and it takes a lot away from the recipe.

    How much is a serving size? A cup, half cup etc?

    Hi Catie,

    This is really more of a condiment so your serving size will depend on how much Pico de Gallo you like on your food. Some people like just a little and some like a larger portion.
