Oh you guys! I have a delicious recipe for you today for a really quick and simple fresh peach ice cream. This is just a perfect taste of summer. You can absolutely substitute any flavors that you like for this recipe but I love peaches in summer. I don’t find peach ice cream often and it is heavenly.
Here is the quick and easy recipe. Since you are using so few ingredients, I try to get the freshest peaches possible. You can use frozen in a pinch but fresh, organic Farmer’s Market peaches pack so much flavor. Totally worth the extra effort to pick them up.
Use 4 large peaches for a mild peach flavor or 6 large peaches for a more intensely peach flavored ice cream.
Here is the simple recipe and I have step by step photos included below:
- 2 cups heavy whipping cream
- 1 can (15oz) sweetened condensed milk
- 4-6 fresh chopped peaches
- Add whipping cream to a chilled mixing bowl and whip until stiff peaks form. The consistency is similar to whipped cream.
- Carefully fold in sweetened condensed milk.
- Roughly chop 4-6 large peaches and puree in a food processor.
- Fold in pureed peaches and pour mixture into a loaf pan.
- Top with saran wrap and place in freezer for at least 8 hours to chill.
Roughly chop the peaches into quarters and puree in a food processor or blender. You can either process until very smooth or leave a few chunks inside – depending on your preference.
Next whip your heavy whipping cream until stiff peaks form. The consistency will be whipped cream- be very careful not to overmix or you will have butter.
Once the cream starts to get stiff, fold in the condensed milk. I like to carefully fold it in so the mixture stays light and fluffy.
Once the condensed milk is blended in, fold the pureed peaches to your ice cream. If you want to have chunks of peaches in your ice cream be sure to chop the peaches into small pieces. Large chunks of frozen fruit look pretty but don’t taste great.
Now just pour the mixture into a loaf pan and cover with saran wrap. Freeze for at least 8 hours or until hard.
Pull it out of the freezer and enjoy!
