Oatmeal Chocolate Chip Skillet Cookie {Copycat Pizookie}

Oatmeal cookies are my favorite.  I know they live in the shadow of chocolate chip cookies and they aren’t as glamorous as a macaron but hopefully this recipe will convince you that everyone else needs to step aside and allow the oatmeal cookie to take its rightful place on the throne.

This cookie smells like a little slice of heaven (sprinkled in cinnamon), is soft and chewy and each bite is filled with chocolatey goodness.

If that isn’t enough to tempt you, I recommend topping this lovely lady with a generous scoop of ice cream. If served as the cookie is slightly warm, well.  It just doesn’t get any better.

So when I got the chance to work with Quaker on the new Oatober campaign, I was very excited and knew exactly what I wanted to make.  Quaker has been around for over 140 years and they want to remind people during the month of October, that oats are a super food that will work for a variety of recipes.  Yes indeedy they will.  But where Quaker oats really shine is in a perfect cookie AmIRight?

This skillet cookie is inspired by the Pizookie at one of the restaurants my husband loves.  They have numerous varieties of cookies served family style in a skillet and topped with ice cream.  So, so good!  When we go to this particular restaurant, we will typically order a Pizookie to share as a family.  “Sharing” doesn’t actually happen though.  What does happen is that our sweet little angels turn into savages, wielding forks threateningly and snarling and before my husband or I can blink, the plate is completely empty.

So I figured it would be fun to make a Pizookie copycat recipe to have at home. So I started with this simple oatmeal chocolate chip cookie recipe baked in a skillet.

Gorgeous and delicious just like that and completely ready to take a little dip in a big glass of milk.

But you can send this puppy over the top by adding a bit of vanilla ice cream and maybe a generous drizzle of caramel and chocolate.  And then you have this beauty just begging you to dive in:

Oatmeal Chocolate Chip Skillet Cookie {Copycat Pizookie}
 
Oatmeal chocolate chip cookie recipe.
Ingredients
  • 1 stick butter- softened
  • ½ cup brown sugar
  • ½ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ½ cup flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1½ cups Quaker old fashioned oats
  • 1 cup milk chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Add butter and sugars to mixer and mix until fluffy.
  3. Add vanilla and egg to mixer and mix just until incorporated.
  4. Add flour, salt, cinnamon and baking soda in a small bowl and slowly add to butter mixture on low speed.
  5. Next add oats and mix until incorporated.
  6. Slowly mix in chocolate chips and mix just until incorporated- do not overmix.
  7. Pour mixture into a skillet and press gently to fit.
  8. Bake at for about 15 minutes until golden brown on top.
  9. Remove from oven, slice into pie shaped pieces and top with ice cream, caramel or chocolate drizzles.

The beauty of this recipe is that most of us have all of these ingredients in the pantry at any given time. I love oats because they work with sweet recipes and savory- incredibly versatile. The oats add a little extra chewiness to this cookie and balance out the sweetness of the chocolate chips.

    Definitely trying this! I have done regular chocolate chip skillet cookie, but I LOVE oatmeal chocolate chip cookies! And I’m a big Quaker fan. 🙂
