School hasn’t quite started for us. We have one last week of summer vacation to enjoy but I already feel a little frenzied as the onslaught children’s of activities have started up again.
Both of my girls play soccer so we have 4 practices each week, 2 games and one tournament a month. Plus jazz dance classes and cheerleading. Oh and ballet rehearsals for the Nutcracker. Did I mention my husband also plays soccer three nights a week? We love to stay busy and active but it does make a dinner a bit of an issue as I am sometimes gone from school pickup until 7pm running from practices and rehearsals. Are you in the same boat?
Meal planning is a must in our house and I have learned to embrace simplicity with meals on busy nights. Sandwiches, soups and omelettes appear on the menu at least once a week- quick, easy and very filling. I am a vegetarian and the rest of the family eats meat so I often struggle to find something quick for myself that is filling and healthy. Once things settle down in the evening, I dash off to the gym to get my workout in before bedtime, so quick really is key.
Avocado toast is one of my favorites for a quick meal and this is a fun little variation on Avocado Toast courtesy of Best Foods®. Best Foods® challenged me to try something different- one of their Strangewich sandwich recipes. Classic sandwich recipes that have an unexpected twist to make something totally new for dinner.
I have to say my Strangewich was really quite good and best of all it just takes minutes to prepare. I can totally take this on the go.
Here are the basic ingredients- you probably already have these on hand:
- 4 slices Whole Wheat Toast
- ½ cup Hellmann's® or Best Foods® Real Mayonnaise
- up to 2 tsp sriracha (add to taste)
- Toast whole wheat bread.
- Mix sriracha and mayo in a small bowl.
- Spread mixture on toast and top with sliced or mashed avocado.
- Top with salt and pepper, a sprinkle of chives or sliced almonds for extra crunch.
I like to mix the sriracha and mayo together but you can also spread the mayo directly on your toast and just drizzle the sriracha on top.
I prefer to mash the avocado and I usually drizzle in lemon or lime juice to give it a little zip.
