I have a super quick recipe for you today that is one of our family’s favorites. We don’t eat a lot of fast food but Chipotle is always a favorite when we do.
My little girl is a very picky eater but the “green rice” at Chipotle tops her list of favorites. I have been wanting to come up with my own version at home so I can make extra for lunchboxes and such.
When I do try making white rice with cilantro and lime juice, the flavor is just not the same. So after experimenting with several variations and tasting side by side, I think I finally figured out the secret ingredient to make this rice pretty darn close to Chipotle (or my daughter actually says it is better.)
To make this recipe is incredibly simple and fast- so this is perfect for weeknights.
This recipe makes 2 generous servings so just double or triple according to your needs.
Here is what you need:
- 1 cup white long grain rice
- 1 cup vegetable or chicken broth
- 1 tablespoon fresh squeezed lime juice
- 1 tablespoon chopped fresh cilantro
- salt and pepper to taste
- Add 1 cup white rice and 1 cup broth to a pot and cook according to package directions.
- Once rice has finished cooking all the liquid should be absorbed into the rice, leaving it light and fluffy.
- Add cilantro and lime juice and stir well.
- Enjoy!
When I have made the rice with water (as per the recipe instructions) it just doesn’t have the extra dimension of flavor. The Cilantro Lime rice we get at Chipotle is pretty salty so I have found by using broth, it isn’t as bland as white rice can sometimes be. The Cilantro and the Lime Juice give an extra little zing to the rice that is just delicious.
Also you can use Arborio rice or brown rice if you prefer. I just used a basic Minute Rice that has a 1 to 1 ratio on rice to liquid. You may need to adjust the ratio depending on the rice you purchase.
