Some days I think I should make the tagline of the blog- Your Rice Krispies headquarters because I certainly have a lot of recipes for them here.
But my little baby girl loves Rice Krispies more than anything and I love to see that giant smile when I make a batch. So here is yet another variation on Rice Krispies.
These are peanut butter and chocolately and so very delicious. You can add butterscotch chips to this recipe for a little extra layer of flavor or stick with the traditional peanut butter, creamy chocolate and crunchy Rice Krispies.

- ¾ cup light corn syrup
- ¾ cup sugar
- 1 cup peanut butter (creamy or crunchy)
- 6 cups Rice Krispies cereal
- 2 cups milk chocolate or semi sweet chocolate chips
- ¾ cup butterscotch chips (optional)
- Start by buttering a 9 x 11 dish well or spray on cooking spray
- Add the light corn syrup and sugar to a large saucepan and cook until the sugar is dissolved over medium/low heat. Watch carefully so your corn syrup doesn't burn.
- Add 1 cup peanut butter to your sugar mixture and stir immediately until smooth and creamy.
- Quickly add your Rice Krispies cereal. Corn syrup will harden so you want to work fast.
- Stir the cereal into the sugar mixture until well incorporated and pour into your prepared dish.
- I use gentle pressure with a spatula to push the cereal mixture into the dish evenly.
- Set aside.
- Next add your chocolate chips (2 cups) OR add 1 cup chocolate chips and ¾ cup butterscotch chips into a saucepan and cook over low heat until melted. The butterscotch chips can seize up so if you use those cook on very low heat and stir often.
- Once the chocolate is melted, pour generously over your krispies.
- Set aside and let the chocolate harden slightly, cut and serve!

A few notes on this recipe- I like to butter a dish really well. Another option is to use parchment paper to line your dish and then pick up the parchment once the krispies cool and the entire thing pops out with no mess.
I personally like to use crunchy peanut butter with this recipe but if you are a creamy PB person that is perfect. Also I have made this with or without the butterscotch chips and we prefer without. I just love the pure chocolate and peanut butter flavor.
With these Rice Krispies you don’t have the marshmallows to keep the krispies together so that is the reason for the light corn syrup. If the amount of sugar is a problem for you (and I totally get it- that is a lot)- you can use 1 cup honey instead.
You may want to add a little more to get the right consistency but the honey mixed with peanut butter will give you a similar flavor.
