Since Back to School time is upon us, I wanted to post my favorite homemade pancake recipe.
This is just like a Bisquick mix where you can mix it up ahead of time and keep it in the pantry for the weekend and then add the wet ingredients for quick and easy, light, fluffy pancakes!
This is a pretty neutral recipe with just a hint of vanilla and cinnamon so you can also add in fresh berries or chopped apples if you have those on hand.
Every single weekend without fail my husband and our girls make big batches of pancakes, we lay them out to cool and then pop them in freezer bags for weekday mornings. The girls love pancakes and have them with a little fruit almost every morning.
And you might be asking- well why bother making my own mix? I can just buy Bisquick at the store. I personally find these taste better then box pancake mixes. The other reason is that box mixes often have all sorts of ingredients you can’t pronounce. I prefer to make real food as often as possible and since this takes seconds to mix and pop into a jar, it just makes sense to me to mix up my own.
This recipe will make 9 large pancakes.
- 1½ cups flour
- 3½ teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- 1 teaspoon vanilla
- 1 tablespoon sugar
- 1¼ cups milk
- 3 tablespoons melted butter
- 1 egg
- Sift all dry ingredients.
- Pour dry ingredients into a bowl and scoop out a small well in the center with a spoon.
- Add the wet ingredients one at a time and stir well to incorporate.
- Transfer mixture into a large measuring cup and pour out onto a hot griddle or frying pan.

You can add a bit more vanilla and cinnamon if you like to taste. I love Mexican vanilla which has a little tiny kick of cinnamon in it and I use that. If you use a standard vanilla from the store like McCormick’s, I find they don’t have as much flavor and I need to use a little more.

Kimmy- I have only tried it for pancakes but I think like a shortcake or something would be fine. What were you thinking of using it for?

Kimmy I think it would work. Obviously leave out the cinnamon and vanilla :). I bet if you added some fresh chopped dill for that chicken recipe it would be delish 🙂

I make up a big batch of mix and keep it in the freezer. Makes delicous tea biscuits! 10 cups of flour, 6+2/3 tbsp of baking powder, i cup of white sugar, 1 tbsp salt. Into this mixture, you cut in a pound of lard till it is about pea size consistency. Place into a large plastic bag and put it in the freezer. Use it just like Bisquit mix for pancakes or biscuits or for impossible pies. Two cups of mix, with enough milk to bind it together. will make 8 good size biscuits. You can substitute shortening or butter for the lard. Or use coconut milk for the milk.

I’ve made this recipe a few times for my kids. I love the addition of the cinnamon and vanilla. The last time I made them my son called my daughter to the table saying, “mom made pancakes…it’s the good ones too!”
