I have a yummy recipe for you just in time for Christmas Dinner or even a weeknight to enjoy the amazing apples in season right now.
I love these little mini pie recipes- I mentioned Mini Pumpkin Pie for Thanksgiving– and these little apple pies look so lovely on a dessert table. There are usually a few choices for dessert during the holidays and it is nice to have this portion control so you can get a little taste of everything.
Plus these little things are really cute for children!
So here is a very easy Mini Apple Pie recipe with an oat topping that you might consider making. You should get about 12 apple pies and these can be made right inside a little muffin tin.
- Dough:
- 1 cups flour
- ¼ teaspoon salt
- ½ stick butter, cubed
- 1-2 tablespoons ice-cold water
- Oat Topping:
- 2 cup oats
- ½ stick butter, melted
- ½ cup brown sugar
- ½ teaspoon cinnamon
- Apple Filling:
- 5 cups apples, peeled and small diced
- 2 teaspoons lemon juice
- ⅓ cup brown sugar
- ¼ cup white sugar
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- To make the dough, mix the flour and salt, then cut the butter into the flour mixture.
- Add in the water, and mix just to combine all the ingredients.
- Be careful not to over-handle the dough.
- Once your dough is ready, wrap it loosely in plastic wrap and refrigerate for at least 20 minutes.
- While the dough is chilling, combine all the apple filling ingredients in one bowl, and the oat topping ingredients in another bowl.
- After the 20 minutes have passed, remove the dough from the refrigerator and roll it out to ¼ inch thickness.
- Using a round cutter or drinking glass, cut circles in the dough large enough to fit the base and walls of each well in a muffin tin. Line the muffin tin wells with dough, cutting away the excess.
- Fill each well with the apple filling (you may need to strain the apples if they appear to be really moist or wet), then sprinkle the oat topping over each.
- Bake at 350°F for 35-45 minutes, or until the topping is golden brown.
And I love homemade whipped cream and it literally takes just minutes. The fresh flavor is so much better then the canned stuff.
