
I thought I would post this quick and easy recipe for those of you that want to get into fall and holiday baking without a lot of fuss.
This is a totally no bake option that is so simple and very yummy! A guaranteed crowd pleaser- especially if your crowd is children.
This is a bite size alternative to a candy apple and you can customize this with any flavors you like, ground up pretzels, candy bars, nuts, rice krispie cereal, chocolate shavings….
I made a pretty classic variation which is just peanuts, mini chocolate chips and caramel.
So to make these little marshmallow bites, you simply need to start with some warm caramel. You can make any caramel sauce you like (the back of the package of caramels will usually have a recipe) or this super easy Crock Pot Dulce de Leche recipe works perfectly.
Next use cake pop sticks (found in the baking aisles of craft stores or Target or Walmart) and insert them into large marshmallows. The fresher the marshmallow the better.
Once you insert your stick, you can dip the marshmallows into a bowl of the warm caramel sauce.
I like to dip holding the stick and I get a generous amount on the top of the marshmallow. Then I gently twist the marshmallow’s sides around the bowl to lightly coat.
This takes a little practice but hopefully you coat the sides lightly enough to where the caramel stays put. If you get a little extra on the top it will ideally drip down and coat the marshmallow even more.
Next I have my toppings on a plate- in this case I chopped up peanuts in a food processor and laid those on one side and on the other side I used Ghirardelli mini chocolate chips.
So while the caramel is still warm but not hot (or your chocolate chips will melt)- I rolled them in the nuts and then the chocolate.
I placed them stick side up on a plate lined with parchment and popped them in the fridge to set.
All done!
This is pretty easy but you do need to stop every so often to warm up the caramel again so it goes on smoothly to the marshmallow.
And you can serve these in little mini cupcake liners, on a platter or put them in little plastic baggies and tie with a bow.
A fantastic little bite sized treat!
These would be very cute for a party or you might pop a few in a mug and stick in a Starbucks gift card for a quick holiday gift.
