Here is the plan for the week. I fell off my menu planning wagon the last two weeks because it has been HOT as all get out here. A little secret is that I tend to be less than delightful when it is hot. Our kitchen somehow turns into a sauna so for the sake of the rest of the family I just avoid it at all costs.
Fortunately my husband has a better temperament than I do and he muddled along with what we had on hand.
So anyway, here is the plan for this week now that I am back in the saddle:
- Grilled Chicken and Corn Salad with Spinach from Real Simple
- Caprese Sandwiches with Salad
- Homemade Popcorn Chicken (also from Real Simple and I hope this works out. The girls love chicken nuggets and I only give them Morningstar nuggets.)
- Crispy Lemon Tilapia and Orzo pasta
- BLT with a Twist and roasted tomatoes
- Tomato and Rosemary Pork Chops from Taste of Home June and July

Charlene, I also have the July Real Simple and see the Crispy Popcorn Chicken recipe, but I might swap Panko (Japanese bread crumbs) for the flour! I was looking back in your 2009 archives for menu plans and you used to make 3 dinners – one regular, one vegetarian, one toddler. Wow, still doing that?

You know I just used panko in spinach balls the other day and it was nasty. I used it in place of bread crumbs so the texture was soggy. Yeah I make one for me, one for them. The toddler one is pretty close to what I make my husband. I just don’t type it all out anymore.
