If you are crazy busy like me, meals tend to fall by the wayside. I usually have coffee and leftovers from my toddler for breakfast- bites of fruit, toast, Cheerios etc.. Sometimes I actually prepare lunch, but since it falls during naptime, I am usually more interested in getting through my to do list than preparing something.
So this is my trick for those times when you need something filling and have zero time. Make a bunch of PB&J sandwiches, seal them in Ziplocs and pop them in the freezer. They take about 20 min to defrost and taste freshly made.
A PB&J is filling and much more nutritious than fast food (or nothing!) I always grab one for my shopping days as they inevitably run longer than anticipated and I am less tempted by junk food in the stores. This is a great option too when you are rushing out the door in morning-and as far as cost- I am estimating less than .10/sandwich. I usually pay .50 for peanut butter and about $1 for jam. My buy price on whole wheat bread is .99- although I have been getting it free at Safeway lately- and the Ziplocs were .37 recently at Target (50 ct).

Does the bread get soggy? It seems like a good idea.

No Jennifer it doesn't. I freeze bread all the time when I get great deals on it. Once it defrosts you can't tell the difference.

I love this idea! I'm thinking I will have to try freezing them for the kids lunches as well. Just get them all made at once.
