Today is a day for cookies. Fo’ sure. It has been a week. Bless. Just bless it all. A very big weekend ahead and this Mommy was up at 2:30am watching really bad TV because I just couldn’t sleep. And in exactly two hours I will be tie dying with (24) 4th graders. Remind me why I volunteer for this stuff again?
So cookies are exactly what this Friday calls for and I have a quick and easy recipe for a chocolate chip cookie that our family just loves. Does the internet really need another chocolate chip cookie recipe? Nope. In fact I rarely make chocolate chip cookies. I always like to find something a little different. A little more interesting.
So this is a pretty basic and simple chocolate chip cookie recipe but the little twist is the addition of malt powder to the dough and I added a handful of malt balls just for more fun. Have you tried malt powder cookies? I had no idea what malt powder was until I made this batch of Milkbar Cornflake Chocolate Chip cookies and I felt as though the heavens opened right up and angels were singing.
The best way to describe malt powder is that it tastes like the inside of a Whoppers or Maltesers candy. If you are a fan of either of those candies (raising both hands over here), you will probably love this cookie.
In fact, you can even take this recipe a step further and add crunched up Whoppers or Maltesers candies. I have made this recipe with and without the candies and it is delicious both ways.
And if you have never purchased Malted Milk, you can purchase from Amazon here or find it either in the baking section of your store or next to the packaged hot chocolate mixes at your local store.
Ok with all that chatting out of the way, we better get started on our cookie recipe.
- 1 cup softened butter
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- ½ cup malted milk powder
- 1 teaspoon baking powder
- 1 cup milk chocolate chips
- ½ cup Whoppers or Maltesers candies chopped
- Preheat oven to 350 degrees.
- Add butter and sugar to a stand mixer and mix on low until creamy.
- Add in egg and vanilla and mix on low to combine.
- In a separate bowl, add flour, malt powder and baking powder and whisk to incorporate.
- Mix dry ingredients into wet just until incorporated.
- Fold in chocolate.
- Bake 10-12 minutes.
I usually use salted butter in baking recipes but you can use unsalted and add just a pinch of salt to the dry ingredients if you prefer.
I chopped my Whoppers for just a few seconds in the food processor.
Also the malt powder does cut down a bit on the sweetness of the cookie so I do prefer milk chocolate chips. You can definitely use semi-sweet if you have that on hand.
Scoop these guys up onto a baking sheet and they are just delicious once baked. I wanted to mention one other thing and that is the butter. I made a few different batches of these cookies when I was recipe testing and using a premium butter (not the cheap store brand I sometimes buy) made such a difference. Also having the butter at room temp (nice and soft) really made a difference too.
