Summer Dinner Ideas - when it is too hot to cook

Goodness you guys.  We have had a heat wave in California this summer.  Fortunately we don’t get much humidity but still.  The thought of facing the oven at 4pm doesn’t thrill me these days.

I thought I would put together a list of menu ideas for those nights when it is just too hot to cook.  Some hearty and filling, some light and refreshing but all simple recipes that don’t require turning on the oven.
