Goodness you guys. We have had a heat wave in California this summer. Fortunately we don’t get much humidity but still. The thought of facing the oven at 4pm doesn’t thrill me these days.
I thought I would put together a list of menu ideas for those nights when it is just too hot to cook. Some hearty and filling, some light and refreshing but all simple recipes that don’t require turning on the oven.

Wedge Salad // Blue Cheese Tomato Salad
Slow Cooker Corn Chowder // Slow Cooker Maple Glazed Ham (make a big ham and you have lunchmeat for days)
Chicken Teriyaki in a slow cooker // Spinach Power Salad (add rotisserie chicken if you like)
Grilled Citrus Salmon // Creamy Chicken Tacos
Chicken Burrito Bowls // Cucumber Mint Soup (in a blender!)

15 Minute Microwave Soup (perfect for a rotisserie chicken) // Slow Cooker Sesame Beef
Santa Fe Tuna Salad (or use rotisserie chicken or diced ham) // Chick Pea Salad
Summer Rainbow Salad // Tomato Mozzarella Salad
White Bean Caprese Salad // Chinese Chicken Salad
