Looking for a quick and healthy treat for the kiddos? Here is a really fun idea for banana “cupcakes” that is fun and would be perfect for after school.
Something like this would hopefully keep their tummies full until dinnertime and bring a smile to their faces.
Here is the recipe:
Banana Cupcakes
Ingredients
- Bananas
- Peanut butter
- Blueberries
- Coconut
Directions
1. Use a piping bag and round decorating tip (or a ziplock bag with a corner snipped off) to pipe a swirl of peanut butter on a 1-inch thick slice of banana.
2. Top with fresh berries, shredded coconut, chopped chocolate, drizzled honey, chopped nuts… whatever your children love.
If you have little ones with peanut allergies, you can always use a Greek yogurt instead of the peanut butter.
Another option would be the yummy peanut butter and yogurt fruit dip recipe here. This is thick enough to serve as the frosting.
