Menu Plan Monday

Here is the menu for the week:

MONDAY: Mashed Potatoes and Broccoli and Pork Chops

TUESDAY: Broccoli and Chicken Casserole

WEDNESDAY: Grilled Eggplant Sandwiches and Honey Gold potatoes

THURSDAY: Steak and roasted grape tomatoes (skipping the pasta on this)

FRIDAY: Wellzones and roasted cauliflower

SATURDAY:

~Christmas Dinner~
Appetizer: Cauliflower Deviled Eggs, Gougeres, Dry Salami, Olives and Cheese (my free Kerrygold Cheese!)
Meal: Prime Rib
Orange Baked Ham
Creamy Goat Cheese Salad
Green Beans
Roasted Fingerling Potatoes
Dessert: Tartufo
Bourbon Walnut Tart

SUNDAY: leftovers

    The grilled eggplant sandwiches sound amazing! I wish I wasn’t the only one who liked eggplant in my family. Mind if I stop by Wednesday? ๐Ÿ˜‰

    Okay, I have the BEST eggplant recipe for you (and you too Valerie!). I had this at a fancy restaurant here where I live. I went home and tried to recreate it and it turned out perfectly!!! It’s an eggplant napolean and it is SOOOO good.

    * Eggplant
    * 1 Cup Panko
    * 2 Egg Whites
    * 1/2 cup Parmesan Cheese
    * Oil for frying
    * 1 Tomato
    * 1/4 cup pesto
    * Goat Cheese

    Slice the eggplant into about 1/2 inch thick circles. Dip in egg whites and then in panko mixed with parm. Cook in a pan coated with oil (obviously, cook on both sides!)…just for a few minutes, until crispy on the outside. Move to a plate and layer like this: eggplant, goat cheese, drizzle of pesto, eggplant, goat cheese, drizzle of pesto, eggplant, diced tomatoes, drizzle of pesto.

    Sorry for the directions….I don’t have a recipe to go off of because I just recreated it myself. I promise, you will NOT be disappointed!!!
