So we are starting renovations in our kitchen tomorrow and the laundry room is officially serving as the kitchen for at least a week. So I won’t really be cooking anything and I decided the easiest route to take was with the crock pot. I bought the crockpot liners that you throw away so hopefully this all works out.
My family has yet to meet a frozen microwave meal they will actually eat so here is the plan:
MONDAY: Salad, Chicken Tortilla Soup and French Bread (leftovers basically to empty the fridge)
TUESDAY: Crockpot Chicken Fajitas
WEDNESDAY: Slow Cooker Cheesesteak Sandwiches
THURSDAY: BBQ Chicken and Spinach salad
FRIDAY: Slow Cooker Pepper Pork Chops and frozen veggies
and I am planning on 2 nights of takeout.

You just proved your awesomeness to me yet again. =) I feel like I’ve been looking for good and easy slow cooker recipes EVERYWHERE, and you just gave me 3. =) And, I have everything for the chicken fajitas already! I think that’s going to be dinner tomorrow.

I am very impressed that you are going to manage to eat at home while renovating your kitchen!!! We did a kitchen remodel three years ago that took almost three weeks (timing issues between vendors) and I’m not sure we ate a single meal at home during that whole period!!! However, today I think I might be a bit more prepared for something like that to happen and might be able to make it through with my crockpot! Congrats on the remodel! 🙂

These recipes look awesome- I’m doing the chicken fajitas and cheesesteak ones this week! Good Luck on the remodel- we had an emergency kitchen remodel last year-major pipe malfunction- had to rip out all my cabinets, floor , everything! We went about 3 months with makeshift cooking but the worst was 3 months of doing dishes downstairs in the laundry tub sink!!!!

Renee that is what happened to us! We had a little flood forcing us to do more extensive remodeling than we hoped 🙂

I love the crockpot recipes too! I made a big thing of lasagna last night and some Deceptively Delicious inspired banana muffins. DH is out of town most of the week so it’s just my son (2.5) and me. I’m thinking leftover lasagna through Wednesday. Banana muffins for breakfast. I have a roast to cook in the crockpot on Thursday, that’ll be Thursday and Friday dinner. I might have to make the roast on Wednesday, then I’ll have to come up with a Friday dinner. Spaghetti anyone? 🙂
How fun to get a nice new kitchen! And a few weeks to do the renovations isn’t soo bad. My mom and step-dad redid their kitchen a few years ago (themselves) and there are still things not done. But she had plywood countertops for months. Sounds like you have a good plan in place using the crockpot. Good luck!
