Here is the menu plan for the week.
MONDAY: Caprese Spaghetti (just mozzarella and fresh tomatoes with pasta noodles)
TUESDAY: Roasted Chicken with red potatoes (I am just doing the Idahoan potatoes- shhh…)
WEDNESDAY: Carrot Soup
THURSDAY: London Broil and Butternut Squash (I am going to lighten this recipe up)
FRIDAY: Open faced eggplant sandwiches
SATURDAY: Salad with Herbed Monkey Bread (using up those free biscuits from Safeway!)
SUNDAY: Roasted Butternut Squash and Gorgonzola Pizza
Well it is warm here but you can tell by the menu that I am ready for winter!

How do you cook your London Broil? It is always so tough for me, even when I braise it for a long time.

Jenna- I don’t eat it so maybe it is terrible 😛 Actually I try a new recipe each time- I think London Broil needs to be rare to mid rare or it is tough. I tried a Rachael Ray recipe last time and that turned out OK- this time I will search around on Food Network to find some other way to cook it.

Ha, ha, that’s funny! Thanks for the tip. I still have some in the freezer so I’ll try cooking it less next time.
