Here is the plan for this week. We have had a lot of leftovers lately, so I decided to only plan 6 meals a week and the last night will be something creative with what is left in the fridge.
MONDAY: Green Salad with apricot filone crostini and fig goat cheese (my husband will probably have chicken breast too)
TUESDAY: Mushroom, Roast Beef and Provolone Patty Melts with sweet potato fries
WEDNESDAY: Roasted chicken with carrots and potatoes
THURSDAY: Chicken Breasts with French Pan Sauce and Steamed Broccoli
FRIDAY: Pumpkin Polenta with Turkey Breast and salad
SATURDAY: Braised Pork Shoulder with green beans
and then for dessert- Banana Rum Sundaes! The recipe is from Taste of Home magazine:
In a large skillet melt 3tbl butter over med/low. Stir in 3/4 cup brown sugar and a dash of nutmeg. Remove from heat and add 1/4 cup golden raisins (I am using regular ones), 4 sliced bananas, 1/4 cup rum, and 2 tbl sliced and toasted almonds.
Cook over medium heat for 3-4 min, stirring gently, until bananas are glazed and slightly soft, Serve with ice cream. Yummy!

Tiffany- I am such a piggy. We bought a Pumpkin chocolate chip cake with cream cheese frosting at the Pumpkin Patch today- so come over next week for ice cream 😉

Oh pumpkin chocolate chip cake with cream cheese frosting … YUM! For the last few years I have been making pumpkin chocolate chip cookies and dare I say it has kind of become my signature cookie – everyone always asks me to make them for them now – and I have to say the combination of pumpkin, chocolate and cream cheese is delightful (might have to start icing my cookies)!!! My other favorite thing is caramel apples or any variation there of … I really need to get myself up to Apple Hill pronto!
