Here is the plan for the week:
MONDAY: Baked Potato Soup, Salad
TUESDAY: Pork Roast with Apples (slow cooker recipe from Woman’s Day- October)
WEDNESDAY: Beef Roast with Parmesan Roasted Broccoli
THURSDAY: Heirloom Tomato and Goat Cheese Tart with Green Salad (this is a delicious recipe and I add a tiny bit of herbed cream cheese as well. I cheat and use pie crust so it is extremely fast.)
FRIDAY: Grilled Steak with Sweet Corn (I bought 10 ears a few weeks ago and grilled them and then cut off the corn and froze it so we have about 3 meals worth in the freezer that just needs to be heated up)
SATURDAY: Sun Dried Tomato and Feta Chicken Penne Pasta and Salad (we got free samples of a seasoning packet for this on our paper today. Looks good!)
SUNDAY: Homemade calzones
AND- for dessert Blackberry Cobbler. Yummy!
I also made a big batch of egg sandwiches for quick breakfast this week ( they just go in the freezer and then I micro for a minute and they are ready)- which we will have with melon. (Just cut up the melon we had delivered last week).
I also have leftover potato soup for lunch and I made a few black bean and whole grain rice burritos. I make the rice in advance and prep the beans. Then I can just warm them up with a little cheese and lunch is 60 seconds away.

What is your recipe for the egg sandwiches? They sound good and in the morning we really could use something fast that goes in the microwave.

Jaime- I used one from Food Network from Cooking with the Neelys. I don’t think I’d make it again- it isn’t very good.

Shelly- it is the lazy man’s breakfast I think. Well not lazy- just busy.
So I use whatever we have- english muffins, those flat bread round sandwich things, or even hamburger buns. I make a huge batch of scrambled eggs and add whatever I feel like. Sometimes black beans, red peppers, cheeses, whatever I have on hand. I wait for the eggs to cool and then I put them on the bun. This week I just did plain scrambled eggs with chopped up red peppers. Then I put a slice of swiss and a slice of cheddar on the buns. Then I wrap tightly in saran and put in a freezer bag. I find they are good for about 4 days- 1 week and then the eggs get gummy.
I micro them in the morning for maybe 1 minute until the eggs are hot and that is it 🙂
