Here is my menu plan for the week! I just got my Pioneer Woman Cookbook and I am playing with a lot of recipes from that!
MONDAY: Grilled Chicken with Spicy Mango Salad
TUESDAY: Homemade Ricotta and Artichoke Pizza (leftovers from last week!)
WEDNESDAY: Chicken Pot Pie (from Pioneer Woman Cooks!)
THURSDAY: Huevos Hyacinth (from Pioneer Woman Cooks!) basically this is eggs in ramekins with tomato, deli meat and cheese. Served with Spanish Rice.
FRIDAY: Chicken Enchiladas (also from Pioneer Woman)
SATURDAY: BBQ Chicken with perfect crispy potatoes and broccoli
SUNDAY: French Onion Burgers with Three Cheese Rice
And I also made the Spinach Dip HERE today which was really good! I got a great deal on Quaker oats and pumpkin puree this week and I will be making the yummy oatmeal from Deceptively Delicious for breakfast!

Oh Jordan it does have pumpkin and it is sooo good!! If I get a chance I will type out the recipe for you. I love that Deceptively Delicious cookbook- everything is so simple yet healthy.

Forgive me if I’m mistaken, but I thought you said that you were a vegetarian. I’d love to hear your menu plan! I’m trying to eat less & less meat, but still love to cook . . . thanks!

Sounds good , do you use th canned chicken for your enchiladas ? I do and my husband cant even tell the difference , and it saves so much time . Love your menu!

No actually my husband does everything chicken related since I am a vegetarian. He just boils it and shreds it (I think) I have never heard of canned chicken!

Yes I am a veggie and really I just modify depending on my mood. So chicken enchilada night I will probably make a bean and cheese quesadilla or a mozzarella and mushroom quesadilla. Otherwise I eat a lot of salads in place of the protein and I love bread. So tonight I will have a salad, the spicy mangoes and french bread and the rest of the family has chicken. The Huevos recipe I can just skip the lunch meat. I eat a lot of veggie meats too so for BBQ chicken night I will probably have a chicken sandwich with a Morningstar Chicken Patty instead. And then for burger night I eat garden burgers 🙂 It is actually pretty easy when you start looking at the side dishes as the entree rather than the protein. So a delicious potato dish or vegetable dish is easily the main part of the meal for me like the Eggplant Gratin we had last week. Super hearty and you don’t even miss the meat.

Yeah you can usually find canned chicken next to the tuna . Just cook on the stove top and it shredds pretty easy . (well that’s how I do it anyway)
