Menu Plan Monday: 15 Min Edition

Moving is never fun- but add a toddler and an infant and it is really, really no fun. So next week we are moving and this is my menu plan for the week featuring things I can put together in just 15 min or so a day.

MONDAY: Green Salad w/ Olives, salami, mozzarella, peppers & Italian dressing. Served with Homemade Garlic Cheese Bread (this recipe makes enough for 2 nights- I just wrap half the dough in saran and cook it fresh the next night).

TUESDAY: Spaghetti w/ Chicken and Garlic Cheese Bread . I put the chicken in the crockpot with marinara sauce- so I just have to boil the pasta and bake the bread.

WEDNESDAY: Moving Day= Take out Pizza Night

THURSDAY: Salsa chicken with brown rice (I throw the chicken in the crock with salsa) I top with a little mozzarella cheese.

FRIDAY: BLTs w/ spinach salad (I crumble extra bacon on the salad too)

SATURDAY: Chicken Enchilladas (I will probably use the crock to cook the chicken yet again- I have a little leftover Tortilla soup that would be a great marinade for the chicken.)

SUNDAY: Red pepper soup with parmesan herb toasts

So there you have it. I really miss all the baking and cooking I used to do before the baby and before this move. I am really looking forward to getting on a regular schedule again.

    Hi Heather, Sort of- we added a 4th bedroom. We got a great opportunity to rent a brand new townhome for 1/2 of what we pay for our mortgage. We also had a renter come along that is willing to pay mortgage, taxes, poolman and gardener upkeep so we couldn't pass it up. We should save a small fortune by moving for a year. We are going to do it and finally pay off the last of my grad school loans.
