Here is the menu for next week. It’s pretty hot here so this is my limited time in the kitchen menu:
MONDAY: Portobella Mushroom Sandwich with smoked mozzarella
TUESDAY: Feta stuffed chicken breast with greek salad
WEDNESDAY: Red Pepper and Tomato Soup with whole wheat rolls
THURSDAY: Mushroom omelettes with cheesy hash brown cups (recipe in comments section)
FRIDAY: Burgers stuffed with smoked mozzarella and sweet potato fries
SATURDAY: Homemade pizza
SUNDAY: Garlic Cheddar chicken with cucumber salad

The cheesy hash brown cups are super easy- take 3 cups of hash browns and mix with 1/4 cup melted butter- press into muffin tin. bake at 400 for about 12 min. Lightly wisk 3 eggs and add salt and pepper and about 1/2 cup shredded cheddar cheese. pour on top of hash browns and bake another 15 min or until brown. You can also add sausage, bacon, peppers, onions- whatever you have to jazz things up.
