Menu Planning Monday: The Crabby Mommy Edition

Well mommy is 40 week’s pregnant this week so we have a crabby and very tired mama! I am sorry to say our menu has deteriorated the last few week’s and we have been eating a lot more processed foods than I like. So here is our menu for this week. Simple, quick and easy is the name of the game and to be perfectly honest I have wanted cereal for dinner more often than not the last two weeks.

MONDAY: Sun Dried Tomato Pasta with green salad

TUESDAY: Tacos (my husband’s specialty and to use up our tortillas)

WEDNESDAY: Lasagna (my husband’s other specialty) with these incredible breadsticks that I am addicted too. (thanks a lot Kate.)

THURSDAY: Pizza Night! (We have a freezer bursting with $.57 Kashi pizzas right now)

FRIDAY: Black Bean Quesadillas

SATURDAY: Roasted Red Pepper Soup with Parmesan crescent rolls (must use the crescents Safeway paid me to take)

SUNDAY: Sausage and cheese fritatta

So there you have it. I used most of our grocery budget for the month already so we are pretty much eating from the pantry right now. Check out Organizing Junkie’s Menu Plan Monday for ideas much more inspired than my own.

    Sorry you’re crabby and tired, but your menu plan sounds yummy! Do you have a recipe for Roasted Red Pepper Soup?

    Hi Melissa- I feel a lot better now since I am home with baby! I wrote that when the contractions first started ๐Ÿ™‚ The Roasted Red Pepper soup is from Pacific Organic and I got the boxes of it on sale at Raley’s several weeks ago for .99. The soup is my favorite and much cheaper than homemade. I usually top it with sour cream.
