Menu Plan Monday (HOT weather edition)

Apparently it is snowing where Laura is, but here in Cali it is supposed to reach 95
tommorrow!!! Since I am also 37 (or is it 87) weeks preggo cooking in a hot kitchen is not on the agenda this week. DH will be doing a lot of grilling in the coming weeks and the crockpot is getting dusted off for sure!
Here’s the plan-
Monday: Orzo Pasta with tomato, cucumber, feta cheese, fresh dill and olives. DH will probably have chicken with his.

Tuesday: Grilled hot dogs and grilled white corn (DH has Ball Park franks that were free at Sfwy after coupons from months ago. I bought Smart Dogs at Whole Foods this week for $1.99 after coupon. The corn is on sale 3/.99 and the buns I buy in bulk at Costco for cheap and freeze.)
Wednesday: Crock pot chicken with mushroom sauce and spaghetti (this is my favorite quick recipe as I just dump frozen chicken breast in the crock and top it with the Bertolli Mushroom Pasta Sauce that has been free at Sfwy. The chicken breast is from a few weeks ago when it was $1.69/lb after coupon at Sfwy. The pasta was from the mix and match promo a few weeks ago and was free with doubles or .25/box without.
Thursday: Shepard’s Pie– this looked so very yummy but the recipe hasn’t made it to FoodNetwork site yet. The Neelys put mashed potatoes in a cupcake tin and topped with sauteed ground beef/veggies and sprinkled with cheddar cheese and baked it. This is a great way to use the ground beef I have been getting for less than .50/lb after coupon at Sfwy and the free potatoes I got by using a catalina coupon.)
Friday: Chef’s Salad- I make this a lot in the summer to use up whatever I have in the fridge. I have more free salad dressing than I care to admit from various promotions and I will serve it with foccacia bread I bought at Walmart for .90 a few weeks ago. I buy the bread on the day old rack, ask the bakery to slice it and put it in the freezer until I need it.)
Saturday: Grilled burgers and green beans (bought the beans this week .60 after catalina promo at Sfwy– the ground beef I mentioned above and I will have a Boca burger that I stocked up on during the Chill at Home promo at Sfwy for less than $2/box. The buns are purchased in bulk at Costco and frozen.)
Sunday: I will have a Kashi frozen pizza that was .57 after coupon and DH will make his Beef Stroganoff (yuck!) This is another use for the ground beef, the No Yolk noodles that I have gotten for .50 after coupon and the Campbell’s mushroom soup that was .16 at Target.)
Dessert: this week we will have grilled pineapple (purchased for $1.99 after coupon) and Breyer’s ice cream ($2 after coupon and promo and also a rebate item for Unilever rebate.) I might make another batch of these incredible brownie cheesecakes. I will use the Hershey’s Bliss I have been getting for .99 after coupons at Target instead of chocolate chips.
If I am motivated, I will also try these Italian breadsticks that look spectacular from Cooking During Stolen Moments. (Note- I buy 32 oz of Precious Mozzarella cheese from Costco for $3.59 so we will have the over the top version!)
I don’t think anything here is over $5.00 a meal.
Is it helpful to have pricing attached with meals or is it annoying? I am hoping to show how you can combine weekly deals with stockpile items to create a decent menu for your family. Most of these items are from Safeway which is a very expensive store. Our deals might not match but I live in one of the most expensive areas in the country- so if I can do it I know you can too!

    wow, you are a great shopper! I am wondering if my menu plan might have to revamped because of the heat. We have a rule in our house – if it gets over 100F, we get to have smoothies for dinner!

    Love your Monday salad – my husband is not wild about olives, but I suppose I could leave them out?

    Smoothies- yum! Orzo is the best thing ever as you can put whatever you like into it. I mix a 2 to 1 olive oil and vinegar dressing with some fresh dill and a squeeze of lemon juice and it is so refreshing. Serve hot or cold.

    Your menu for the week looks great! I am not sure what to make for dinner today since it is going to be almost 95 degrees in San Jose. Maybe I should look into making smoothies. ๐Ÿ˜‰
