For St Patrick’s Day I decided to do something festive and I was mentally flipping through ideas of green foods when I suddenly remembered Grasshopper Pie.
I haven’t had this pie in years and the minty and chocolaty flavor is perfect for the lovely spring days we are enjoying right now.
The first time I had this pie was when I was about 7 at my friend Portia’s house. Her Mom was British and had a nose ring (way before nose rings were popular) and incredibly cool and everything at their house was always terribly impressive to me. They once had Grasshopper Pie and I remember thinking it was the best thing I had ever had.
So here is a super easy recipe for Grasshopper Pie and my kids LOVED this. If you like Mint Chocolate Chip ice cream, you might want to give this a whirl.
I will warn you now this is full of terrible stuff but I am of the 80/20 opinion. Just eat well 80% of the time and the other 20% you can have wonderful things like French Fries and Grasshopper Pie.
So here goes:
- Oreo Cookies
- ¼ Cup Butter- melted
- 1½ cup heavy cream
- 1 jar Marshmallow Fluff (7oz)
- 2 drops green food color (optional)
- ½ teaspoon peppermint extract
- Start by making the crust- you can buy an Oreo crust ready made but it is incredibly simple to make.
- Take 20 whole oreos and add them to the food processor until finely ground. (You can also put these in a freezer bag and bash the heck out of them.) Melt ¼ cup butter and add to the oreo mixture- blend well.
- Place the mixture into a pie dish and push down with your fingers to make a firm crust. Place crust in the freezer while you start the rest of the pie.
- Add 1 jar of marshmallow fluff to a large bowl. Add ½ teaspoon peppermint extract- stir.
- Add 1½ cup heavy whipping cream to a stand mixture or whisk by hand until it becomes whipped cream. This takes me about 6 minutes in my Kitchenaid at a medium-high speed. Careful you don't overmix!
- Take the whipped cream and fold into the marshmallow fluff. Stir well. If you like the green color of the pie you can add 2-3 drops of food coloring. This will be a very light mint color.
- Scoop the mixture into the pie crust and that is it! I like to freeze the pie for a few hours to get more of an ice creamy flavor but it can also be served right away.
- I also like to top with chopped up Andes Mint Candy or you can also add more Oreo crumbs to the top for extra texture.
Another option would be to follow the directions and instead of making one large pie, you could layer the filling and the Oreo crumbs in small jar or parfait glass.

I am going to try a dairy free version of this…replacing the butter and using a can of coconut milk, whipped. Hope it turns out!

Rachael you could always skip the butter and use the crumbs of the chocolate cookies you use to layer in parfaits instead of a pie crust. I think that would still be really good. I don’t know what to do about the heavy cream though… I actually thought 1/4 cup of butter was a little too much to my taste I used a little less then that but the crust isn’t as solid.

I tried the mint oreos for the crust. Very good. Skip the reduced fat 😉
