Menu Plan Monday

Our cupboards are still on the verge of bursting so I was very happy to find a few recipes this week to use up items in the pantry.  Since a few people asked I am including the versions of the menu I make for myself this week.  I am a vegetarian and my husband and toddler eat meat.

MONDAY:  Grilled Chicken Salad with Goat Cheese Crostini/ Green Salad with Goat Cheese Crostini

TUESDAY:  Eggplant Gratin (I am making this again because it is so yummy and to use up leftover ricotta)

WEDNESDAY:  Beanless Mexican Chili w/ Rice (this recipe is from the Safeway coupon book and I am thrilled to find a use for the Tomato Basil soup in the cupboard!) I will probably make a quesadilla with black beans, corn and cheese and with rice.

THURSDAY:  Chicken and Rice Skillet (we seriously need to get rid of some rice in the pantry!  This is also from the Safeway coupon book.)  I will eat leftover eggplant.

FRIDAY: Cream Cheese & Garlic stuffed Chicken Breast w/ veggies (to use all that cheap cream cheese!)  I will have a grilled vegetable sandwich.

SATURDAY: Apple and cheddar paninis with salad

SUNDAY:  Marlboro Man’s Favorite Sandwich from Pioneer Woman cookbook (basically a steak sandwich) with cheesy hashbrown casserole (this is a big gooey piece of heaven if you have never had it)  I will probably have some veggies to make me feel better for eating a ton of casserole!

    I LOVE apple cheddar paninis 🙂 Do you use spicy honey mustard in yours? I do, and i have dubbed it my “Vermont sandwich” as all of the ingredients come from my neighboring state: VT. Sooo delicious! I think i will have to add it to my menu this week!

    Okay, I could never be a vegetarian because I love meat so much… but I have to admit that your menu sounds delicious!!

    I wondered! I am LO-veg and love your menu plans. I don’t have a family, but the rest of my immediate fam (parents and sister) live nearby and they eat meat, so it’s great to see the marriage of the two!

    I made the marlboro man sandwiches last week – they’re delicious. And I have a similar recipe for hash browns but with crushed conflakes on top. As a side note – our crock pot recently broke. Anyone know where to find a good price on one?

    Did you want a good one or just a super cheap one? The HB programmable crock is on sale at Amazon HERE.

    Otherwise try that Target code I just posted and try the Kohl’s codes I just posted. I would check Kohl’s first personally.
