Ooey Gooey Pumpkin Butter Cake

  • I package yellow cake mix or spice cake mix
  • 1 egg
  • 8 tablespoons melted butter
  • 8oz cream cheese, softened
  • 15oz pumpkin puree
  • 3 eggs
  • 1 teaspoon vanilla
  • 8 tablespoons melted butter
  • 16oz powdered sugar (about 3½ cups)
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  1. Preheat oven to 350 degrees.
  2. Add cake mix, egg and butter to the bowl of a mixer and combine.
  3. Prepare a 13x9 inch baking dish with butter and pour cake mix into the bottom of the dish.
  4. Using your fingers or the back of a spoon press the mixture into an even layer. Set aside.
  5. Now mix the cream cheese until light and fluffy- adding the pumpkin and continuing to mix until creamy.
  6. Add eggs, vanilla and butter until incorporated.
  7. Beat in the powdered sugar and spices until the entire mixture is creamy.
  8. Pour over the top of the cake and bake for 40-50 min.
  9. The center will be gooey- do not overbake.
  10. Serve with fresh whipped cream or a light dusting of powdered sugar.
