Milk Bar Cornflake Chocolate Chip Cookies

Milk Bar Cornflake Cookies
Ingredients
  • 1 cup unsalted butter, room temp
  • 1¼ cup sugar
  • ⅔ cup brown sugar
  • 1 egg
  • ½ teaspoon vanilla
  • 1½ cups flour (note: you can add 2 cups of flour for a fluffier cooker)
  • 1¼ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ⅔ cup mini chocolate chips
  • 1¼ cup mini marshmallows (optional)
  • PLUS Cornflake Crunch:
  • 5 cups corn flake cereal
  • ½ cup milk powder
  • 3 tablespoons sugar
  • 1 tsp salt
  • 9 tablespoons melted butter
Instructions
  1. Start by making the cornflake crunch.
  2. Preheat oven to 275 degrees.
  3. Line baking sheet with parchment paper and set aside.
  4. Place cornflakes in a bowl and use the end of a large spoon to mash the cornflakes down into tiny pieces. (About ¼ the original size)
  5. Add milk powder, sugar and salt and gently toss to combine.
  6. Add butter and stir- you should have clusters with all the ingredients together.
  7. Spread on a baking sheet and bake for 20 minutes*. Be very careful not to burn!
  8. *I baked 11 minutes only so watch your oven time carefully, mine was much lower than the original recipe.
  9. Remove from oven and set aside to add to cookies later.
  10. Now for the cookies:
  11. Cream together sugar and butter for 2 minutes in a stand mixer on medium.
  12. Scrape down sides of bowl and add vanilla and egg.
  13. Mix for 7-8 minutes.
  14. Next add dry ingredients- flour, salt, baking soda and baking powder.
  15. Mix just until ingredients are incorporated - about 1 minute on low.
  16. Continue with mixer on low and add cornflake crunch and chocolate chips.
  17. Once incorporated add marshmallows. (I prefer to omit the marshmallows)
  18. Line baking sheet with parchment and scoop the dough out- the original recipe calls for a ⅓ measuring cup to scoop the dough. I used a standard cookie scoop.
  19. Pat cookie dough down and wrap with saran wrap and chill in fridge for at least one hour.
  20. Once dough is chilled, bake in 375 degree oven for about 18 minutes.
