Simmer cream, half and half and sugar in a saucepan for about 5 minutes until sugar dissolves.
Add bittersweet chocolate, stirring constantly until it is completely melted.
Remove from heat and set aside.
Whisk 3 egg yolks in a separate bowl and carefully add to milk mixture, stirring constantly.
Place over medium-low heat, stirring frequently until the mixture coats the back of a wooden spoon.
Strain mixture over mesh strainer and allow to chill in the fridge for at least 4 hours or preferably overnight.
Pour into your ice cream maker and churn according to maker directions.
Spread marshmallows out on a baking sheet lined with parchment paper and place under broiler.
Watch constantly as it should take 30 seconds 2 minutes for the marshmallows to toast.
Remove immediately and allow a few seconds to cool. Set aside.
Pour 50% of mixture into a loaf pan or ice cream containers and top with toasted marshmallows, milk chocolate and graham crackers. Pour in remaining ice cream mixture and top with more graham crackers, milk chocolate and marshmallows.
