Smoked Cheddar and Chive Mashed Potatoes
  • 2 lbs of yukon potatoes, peeled and cubed
  • ½ cup cream or milk (I used 2%)
  • 2 tablespoons butter
  • Chives
  • Salt and Pepper
  • 1 cup grated smoked cheddar cheese
  1. Place potatoes in a large pan of water and bring to a boil.
  2. Reduce heat to medium- high and cook about 15 minutes, until fork tender.
  3. Remove from heat and drain water.
  4. Place potatoes back in the pan and add butter and milk.
  5. Mash to desired consistency and add cheese.
  6. Stir well to incorporate and season with salt and pepper.
  7. Top with chopped chives.
