Apple Cinnamon Muffins with Cream Cheese Frosting

Delicious apple cinnamon muffins- perfect grab n go breakfast!
Ingredients
  • 1 cup flour
  • ¼ cup whole wheat flour
  • ⅔ cup brown sugar
  • 2 tsp baking powder
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup chopped apples
  • ½ teaspoon salt
  • 2 eggs
  • ¼ cup milk
  • ½ cup melted butter
  • For Frosting:
  • 1½ cups unsalted butter, cubed and chilled
  • 4oz cream cheese cubed and chilled
  • 3 cups powdered sugar
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 375 degrees.
  2. Start by peeling and chopping your apple - a medium size apple works perfectly for this recipe. Set aside.
  3. In a medium bowl add the dry ingredients- flour, salt, cinnamon, sugar and baking powder. Set aside.
  4. In a second bowl whisk together the eggs and milk.
  5. Add in the vanilla and melted butter (give the butter a few seconds to cool before adding in).
  6. Mix the wet ingredients into a bowl with the dry ingredients and stir to incorporate. The batter will be somewhat thick.
  7. Next fold in the chopped apples.
  8. Pour the mixture into baking cups - filling about ⅔ of the way full. Careful not to overfill or you may have a mess in the oven.
  9. Bake about 18-20 minutes until golden brown on top and a toothpick inserted in the center comes out clean.
  10. While the muffins cool, you can mix together the frosting:
  11. Add the butter to your mixer and mix until light and fluffy.
  12. Add in cream cheese and mix well.
  13. Slowly add in powdered sugar ½ cup at a time until you get a consistency and flavor you like. About 3 cups is usually right for me.
  14. Add in vanilla and you are done!
