Quick and Easy Rosemary Focaccia

Quick and Easy Rosemary Foccacia Bread.
Ingredients
  • ¼ cup olive oil
  • 2 sprigs rosemary, stems removed and leaves chopped
  • 1 tablespoon olive oil
  • 1 bag refrigerated, store-bought pizza dough
  • 1 tablespoon minced garlic
  • 1 tablespoon coarse kosher salt
  • Parmesan Cheese freshly grated (optional)
  • teaspoon red pepper flakes (optional)
Instructions
  1. In a sauce pot, combine the ¼ cup of olive oil and chopped rosemary leaves. Heat over low heat just to warm the oil, then remove from the heat and let the rosemary steep in the oil for a minimum of one hour. (Not necessary but this gives great flavor if you have the time.)
  2. Add the minced garlic to your oil mixture and set aside. You can also add the red pepper flakes if you like- a little goes a long way and you want to make sure it is evenly distributed over the bread.
  3. Preheat the oven to 400°F.
  4. Lightly grease a baking pan with the tablespoon of olive oil.
  5. Use your fingers to shape the pizza dough into a rectangle, and place it on the greased baking pan. Press small indentations in the top of the dough, then lightly brush the top of the dough with the rosemary-infused olive oil. Sprinkle the salt over the top of the olive oil.
  6. If you want to add Parmesan cheese, sprinkle that over the top.
  7. Bake in the 400°F oven for 20-25 minutes, or until golden brown.
  8. Remove from the oven, all the dough to cool, then serve.
