Homemade Caramel Popcorn Recipe (Homemade Cracker Jacks)

- ½ cup butter
- 1 cup brown sugar
- ½ cup corn syrup
- ½ tea salt
- ½ tea vanilla
- ¼ tea baking soda
- 2½ quarts popcorn- microwave or make your own
- First make your popcorn and set that aside in a large baking dish (or two dishes)- you want a nice even layer not too deep.
- Preheat the oven to 250 degrees.
- Next get started on the caramel sauce.
- Add butter to a pan and place over medium low to melt.
- Once melted, add brown sugar and corn syrup and salt.
- Stir and move heat up to high.
- Bring to boil- stirring constantly.
- Once it starts to boil stop stirring for 2 minutes.
- Remove from heat and add your vanilla and baking soda.
- Stir well and quickly pour over the popcorn.
- Try to coat the popcorn evenly and then place the baking dishes in the oven for 45 minutes.
- Be sure to stir your popcorn every 15 minutes so it doesn't burn.
- Remove from oven and enjoy!
