Artichoke and Sun Dried Tomato Farro Recipe {Clean Eating!}

Quick and easy mediterranean farro recipe- so filling and really delicious.
Ingredients
  • Farro
  • Feta Cheese (optional)
  • Sun Dried Tomatoes in oil
  • Artichoke Hearts chopped
Instructions
  1. Cook 1 cup Farro according to package directions. Typically you will bring 3 cups of water to a boil, add 1 cup Farro, cover the pot and let it simmer for 25-30 min until the water dissolves.
  2. Remove from heat and drain off any small amounts of excess water.
  3. Roughly chop about ½ cup of artichoke hearts.
  4. Mix artichoke and Farro in a bowl and add about ½ cup sun dried tomatoes. You want to include the olive oil marinade from your jar to give extra flavor to the Farro.
  5. Sprinkle with a light dusting of Feta Cheese and Enjoy!
