I was making lunches the other night and we had a carton of gorgeous raspberries in the fridge. I decided to surprise the kids with a little treat in their lunchboxes and I wanted to post this just in case some of you have never tried White Chocolate Raspberries.
These really couldn’t be easier to make and they are really wonderful- plus if you are trying to shape up for summer this is a very low calorie dessert option.
You simply stuff the raspberries with one white chocolate chip. And that’s it :). Couldn’t be easier and I usually mix half and half- plain raspberries and stuffed raspberries.
You can also use chocolate chips if you prefer- I am normally a milk chocolate person but I actually prefer the white chocolate in these. I think a mix and match with chocolate and white chocolate would also be good. If you find really good dark chocolate chips that would be even better for you.
I think these are lovely in a bowl with blueberries for Memorial Day and 4th of July as well. Much easier then most treats you see for sure.
I also make these from time to time for picnics. I like to go all out for picnics and these are such a fun little dessert option to munch on. Usually during summer my Costco will have 12oz of Raspberries for about $3.49– that is organic so an absolute steal.
When that sale comes along I tend to make these when I am Soccer Snack Mom or for class parties. The berries are affordable and kids love them.
And here are some other recipes you might also enjoy:
Watermelon Lime Sorbet (no ice cream maker needed)
Perfect Fresh Squeezed Lemonade
Healthy Avocado Lime Spread– much better alternative to mayo for sandwiches, try this on a burger or perfect lower calorie alternative to Guac on Mexican food.

Thank you! I’m going to do this on the buffet table for my son’s graduation party in June. So simple and looks great!

Oh that is perfect Dodi! I have some 4th of July ideas in my head that will totally work with your party too Dodi. As long as they don’t turn into a big mess I will be posting well before your party so you have more options 🙂

I have both of these ingredients, so I made a few for after dinner. My kids loved them and so did I 🙂
