And here is the menu plan for the week. The one thing with getting the organic produce deliveries is that you have to be flexible with your menu which can be tough for me.
But here is what I have planned:
- Roasted summer squash and chicken
- Chicken with apples and raisins and couscous
- Spinach and Artichoke pizza (the kids will have red pepper instead of artichoke and I sort of hide all the veg under the cheese layer)
- Pulled Pork Sandwiches and broiled heirloom tomatoes with asiago cheese
- Steak Fajitas with corn and black beans
- Pesto Chicken Salad
And there you have it. We will probably have leftover squash so I am going to try and make a casserole for the freezer.
