I just bought the new Jaime Oliver cookbook and almost all of these recipes are from his book. The photos leave something to be desired but the recipes all look good to me. I found a lot of comfort foods that have a healthier spin. Like the potato salad below is made with chives and yogurt rather than mayo.
Also he does this interesting thing where he gives very simple recipes- like the carrot salad and then tells you how to jazz it up even more. I thought that was a good idea to adjust a recipe depending on how much time you have.

Ps- Have you tried the Pamonas pectin from WF? I’ll be trying this instead of the “low sugar needed pectin”.

Where does the Cauliflower Cheese Soup recipe come from? Can you share that? Sounds yummy! I think w/the pork shoulder being on sale @ Safeway, I might try out the Cuban style pork shoulder with you this week! Thanks for sharing your meal plan & recipes. They are a huge help!

Jessie- I was watching Hulu when I made dinner and made the wrong recipe 😛 So I made a cauliflower gratin which I thought was excellent. My toddler #1 started crying when I made her taste it and toddler #2 ate several bites. I think the bacon is the secret- here is his recipe:
350 oven, boil water, cut up one large cauliflower, pick the leaves off 2 springs of rosemary, add cauli to pot of boiling water with pinch of sea salt- boil 5 min. chop 4 anchovy fillets and add to bowl with 1 2/3 cups creme fraiche or heavy cream, add 1 cup grated cheddarand season with salt and pepper. pour a lug of EVOO into food processor and add 4 slices bread with crusts on., a slice of bacon, and rosemary.
Whiz until it turns into breadcrumbs. Drain calui and put in baking dish. spoon sauce over and spread another cup of grated cheddar, then breadcrumbs. place in oven for 45 min until bubbly.
I skipped the anchovy and bacon and I didn’t have rosemary but I used flavored sea salt. I used italian flavor breadcrumbs so it was super fast. Also I chopped the cauliflower so it was in little bites to mimic mac and cheese. I think next time I will do the same but sprinkle bacon on the top and maybe the kids will like it better.
