Recipe: Strawberry Hand Pie

A quick and easy summer dessert, perfect for 4th of July!
Ingredients
  • 1½ cups chopped strawberries
  • 2 tbl sugar
  • 1 tbl cornstarch
  • Turbinado Sugar (Sugar in the Raw)
  • Egg white
  • Puff Pastry
Instructions
  1. Line a baking sheet with parchment paper and set aside.
  2. Chop those strawberries up and mix with white sugar and cornstarch.
  3. Set aside.
  4. Roll out the puff pastry and use the cookie cutter to cut shapes. You can use the rim of a glass to just cut circles if you don't have a cookie cutter.
  5. Add the strawberry mixture to the center of each shape.
  6. Lightly wisk one egg white and brush the edges of the shape.
  7. Add a second cutout of pastry on top and use a fork to seal all around the edges.
  8. Brush more egg white onto the top of the sealed pie and sprinkle Turbinado sugar (or plain white sugar or decorator's/sanding sugar) to the top of the pie.
  9. Bake at 400° for about 15 minutes. Watch carefully as the time will depend on the size of the pies you make.
