Champagne Buttercream Cookies

Quick and easy Champagne Buttercream Cookies. Perfect for any celebration!
Ingredients
  • Cookie:
  • 1½ cups powdered sugar
  • 1 cup butter softened
  • 1 teaspoon vanilla
  • 1 egg
  • 2½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • Frosting:
  • 3 cups powdered sugar
  • ½ cup butter- softened to room temperature
  • 6 tablespoons champagne or sparkling wine*
Instructions
  1. Mix powdered sugar and butter in a large mixing bowl until light and creamy.
  2. Add in vanilla and egg and stir to incorporate.
  3. Add flour, baking soda and cream of tartar to a separate bowl and whisk gently to incorporate.
  4. Slowly mix in dry ingredients, stirring well.
  5. Remove dough from mixer and wrap tightly in saran wrap and place in fridge for 2-24 hours to chill.
  6. Once chilled, remove from fridge and roll out into a ½ inch thick on a lightly floured surface (I use powdered sugar instead of flour)
  7. Cut into a circle shape with a circle cookie
  8. Bake at 350 degrees for about 10 minutes.
  9. Cool on a rack.
  10. For frosting, add butter and powdered sugar to a large mixing bowl and mix until fluffy.
  11. Add champagne slowly, continuing to mix well.
  12. You may need to adjust with a splash of milk or cream if the mixture seems a little too thick. If it seems too wet just add another ¼ cup of powdered sugar.
