Roasted Tomato and Mozzarella Spaghetti

Quick and easy mozzarella and roasted tomato pasta. Perfect for summer!
Ingredients
  • 2 pints cherry or grape tomatoes
  • Olive oil
  • ½ teaspoon red pepper flakes
  • 1 tablespoon minced garlic
  • salt and pepper to taste
  • 1 lb angel hair pasta
  • ½ cup fresh mozzarella
  • 1 cup freshly grated parmesan cheese
  • 1 handful fresh basil, julienned
Instructions
  1. Add the cherry/grape tomatoes into a baking dish or baking sheet and drizzle olive oil over the top.
  2. Add minced garlic and a sprinkling of red pepper flakes. Plus salt and pepper.
  3. Roast the tomatoes at 400 degrees for about 45 minutes. Check every 15 minutes until the tomatoes start to wrinkle and collapse. (Cooking time varies according the size of the tomatoes. Grape tomatoes will take longer.)
  4. Remove from oven and set aside.
  5. Prepare pasta according to package instructions.
  6. Drain pasta and add cheese and tomatoes and top with fresh basil.
  7. Serve immediately.
