Apple Cinnamon Muffins with Cream Cheese Frosting

- 1 cup flour
- ¼ cup whole wheat flour
- ⅔ cup brown sugar
- 2 tsp baking powder
- ½ teaspoon cinnamon
- 1 teaspoon vanilla
- 1 cup chopped apples
- ½ teaspoon salt
- 2 eggs
- ¼ cup milk
- ½ cup melted butter
- For Frosting:
- 1½ cups unsalted butter, cubed and chilled
- 4oz cream cheese cubed and chilled
- 3 cups powdered sugar
- 1 teaspoon vanilla
- Preheat oven to 375 degrees.
- Start by peeling and chopping your apple - a medium size apple works perfectly for this recipe. Set aside.
- In a medium bowl add the dry ingredients- flour, salt, cinnamon, sugar and baking powder. Set aside.
- In a second bowl whisk together the eggs and milk.
- Add in the vanilla and melted butter (give the butter a few seconds to cool before adding in).
- Mix the wet ingredients into a bowl with the dry ingredients and stir to incorporate. The batter will be somewhat thick.
- Next fold in the chopped apples.
- Pour the mixture into baking cups - filling about ⅔ of the way full. Careful not to overfill or you may have a mess in the oven.
- Bake about 18-20 minutes until golden brown on top and a toothpick inserted in the center comes out clean.
- While the muffins cool, you can mix together the frosting:
- Add the butter to your mixer and mix until light and fluffy.
- Add in cream cheese and mix well.
- Slowly add in powdered sugar ½ cup at a time until you get a consistency and flavor you like. About 3 cups is usually right for me.
- Add in vanilla and you are done!
