Broccoli Cheese Soup Recipe

Creamy Broccoli Cheddar Soup. So comforting on a cold night.
Ingredients
  • 1 tablespoon butter
  • 1 white onion, chopped
  • 1½ stalks celery, chopped
  • 1 carrot, chopped
  • 1 clove garlic, chopped
  • 2½ cups broccoli, chopped
  • 3½ cups chicken stock
  • ¾ cups cheddar cheese, shredded
  • salt and pepper as needed
Instructions
  1. Cook the onion, celery, and carrot together until softened, about 3 to 5 minutes. Add the garlic and cook an additional minute, or until fragrant.
  2. Add in the broccoli and stock, stir, and bring to a boil.
  3. Gently simmer the mixture for 10 to 12 minutes, or until the broccoli has softened.
  4. Remove the soup from the heat, then blend the soup and its ingredients carefully to a smooth texture (using immersion blender or standard blender).
  5. Heat the soup on the stove, add in the shredded cheddar cheese, then season as needed with salt and pepper.
