Crock Pot French Onion Soup - Stove Top Method

Quick & Easy French Onion Soup Recipe
Ingredients
  • 4 large onions sliced thinly
  • 1 clove garlic, minced
  • 2 tablespoons flour
  • 2 sprigs fresh thyme or ¼ teaspoon dried thyme
  • 2 cartons of beef broth (32oz) or substitute mushroom broth
  • baguette, sliced into 1 inch pieces
  • 1 cup Gruyere cheese, shredded
Instructions
  1. Start by drizzling a bit of olive oil on the bottom of a large pot over medium high heat.
  2. Add 2 tablespoons butter.
  3. Next add the sliced onions, thyme and garlic.
  4. Cook for about 25 minutes on medium- low heat. You do not want the onions to burn so be sure to stir them every few minutes. They should start to get nice and brown and caramelized.
  5. Add 2 tablespoons flour to the onions and stir in well.
  6. Cook for 5-10 more minutes just so you don't have a raw flour taste to your soup.
  7. If you used fresh thyme, remove the stems from the pot.
  8. Add the beef broth and bring to a boil.
  9. Reduce heat and let simmer about 30-45 minutes.
  10. Add salt and pepper to taste.
