Easy Grasshopper Pie Recipe

Minty, chocolately goodness!
Ingredients
  • Oreo Cookies
  • ¼ Cup Butter- melted
  • 1½ cup heavy cream
  • 1 jar Marshmallow Fluff (7oz)
  • 2 drops green food color (optional)
  • ½ teaspoon peppermint extract
Instructions
  1. Start by making the crust- you can buy an Oreo crust ready made but it is incredibly simple to make.
  2. Take 20 whole oreos and add them to the food processor until finely ground. (You can also put these in a freezer bag and bash the heck out of them.) Melt ¼ cup butter and add to the oreo mixture- blend well.
  3. Place the mixture into a pie dish and push down with your fingers to make a firm crust. Place crust in the freezer while you start the rest of the pie.
  4. Add 1 jar of marshmallow fluff to a large bowl. Add ½ teaspoon peppermint extract- stir.
  5. Add 1½ cup heavy whipping cream to a stand mixture or whisk by hand until it becomes whipped cream. This takes me about 6 minutes in my Kitchenaid at a medium-high speed. Careful you don't overmix!
  6. Take the whipped cream and fold into the marshmallow fluff. Stir well. If you like the green color of the pie you can add 2-3 drops of food coloring. This will be a very light mint color.
  7. Scoop the mixture into the pie crust and that is it! I like to freeze the pie for a few hours to get more of an ice creamy flavor but it can also be served right away.
  8. I also like to top with chopped up Andes Mint Candy or you can also add more Oreo crumbs to the top for extra texture.
