I hope you are enjoying great weather where ever you are! It is nice and warm in California so you will see a lot of warmer weather meals from me! All menus are based on 2 adults and 2 children.

Watermelon is .48/lb this week so here is a recipe for Tomato-Watermelon Salad which can be served with the crescent rolls that have been free after coupon and catalina.

Watermelon .20

2 Large Tomatoes .99

1 Pint Cherry Tomatoes $2.00

4 strawberries (I hope you have some left from the great sale last week!) .66

Grand Total $3.85

Ground Beef Enchiladas

1lb lean ground beef $1.99/lb

6 flour tortillas .25 after coupon

8 oz Colby cheese (32 oz blocks on sale $4.99) $1.25

1 can enchilada sauce $1.19

1 yellow onion .74

Grand Total $5.42

Bargain Meal of the Week 4/22-28

For my Bargain Meal this week I thought I’d focus on the great Lean Ground Beef sale this weekend for kicked up burgers! Here is my $5 dinner for 4 people- ENJOY!

BBQ Beef Burgers $1.69/lb = $1.69

Hamburger Buns (I hope you stocked up when they were $1/6 a few weeks ago) $.66

Serve with grilled artichokes which are on sale 10/$10 = $2.00

TOTAL $4.35

OR if you live in a HOT weather area like I do, try this delicious salad instead

Strawberry-Mango Salad

Fresh Express Salad Mix 10/$10= $1.00

Mangos 10/$10= $1.00

4 lbs Strawberries $4.28- use 1/2 lb = .53

Onion $1/lb= .50

Dried Cranberry .50 oz (Safeway bulk bins) = $1.50

TOTAL: $4.53

OR skip dinner altogether and make these Mango Margaritas

Bargain Meal of the Week: Safeway

Since red seedles grapes are a steal this week and they are so good for you I wanted to find a recipe that used them in a main dish. This looks delicious- Chicken with Red Grapes- you can serve it over Egg Noodles.

Chicken Breast (bone in on sale this week) .99/lb x 1.5 lbs= $1.50

Grapes .68/lb estimate 1/2 lb = .34

Mushrooms 2/$4 = $2.00

No Yolk Egg Noodles (part of the Living Well promo- .50 after coupon, free if your store doubles

Total: $4.34

Bargain Meal of the Week

Since there is a whole lotta nothin this week at Safeway- I thought I’d throw out a simple chicken recipe.

I have tried this without the fresh Rosemary and Onion and it was very good. Slow cooker recipes are my favorite as they work with whatever you have on hand.

Serve with Baked Potatoes (which can also be cooked in the Crockpot)

Chicken 2lbs $1.99ea = $3.98

Apples @ .98lb= .49

Russet Potatoes @ .69lb= $.69

$5.16 Total for 4 people

If you have extra apples this recipe is super simple for dessert:

I just use apples although you can add other fruits or raisins if you have them. You can freeze the apples in a bag and freeze the topping and have apple crisps in minutes.

Bargain Meal of the Week

Well since there is a whole lotta nothing at Safeway this week- I wanted to suggest this yummy fritatta from Ina Garten.

Eggs: $1.99- 18pk

Potatoes: .69/lb

Some markets got Super q’s for $4.49 Tillamok cheese!

Eggs (5) .55

Potatoes 1lb= .69

Cheese 4oz x .14= .56

$1.80 not including the butter and milk. I make this with or without bacon- using whatever I have on hand. You can also substitute ham and any veggies you have. If you are interested in learning more about how I save a fortune on bacon and lunch meat check out my article here.

You can also add salsa and sour cream.

Bargain Meal of the Week

I am participating in $5 dinners Bargain Meal of the Week- to show you how to score the best deals and then what to do with the deals you get! I will be posting a menu idea for Safeway stores based upon what’s on sale this week. The meal will be under $5 and keep in mind I do not have doubles in Northern CA.

March 25-31

Fresh Express Salad, $.75 (part of the mix and match promo) OR

Del Monte Canned Veggies. $.75 (Part of the mix and match promo)
Dessert:
Grilled Pineapple with Whipped Cream (Substitute whip cream for frozen yogurt and granola)

Whole pineapple $3.99- .75/1 IP from toolbar on the right = $3.24

Safeway Whipped Topping tub $1.79

Approx cost using 1/4 of the pineapple: $.81 + 1/4 whipped topping $.44 = $1.25
Grand Total: $4.77
