Chicken Tortilla Casserole
1 Cup chopped chicken (bone-in chicken is .99/lb this week, click here for easy instructions on how to work with bone-in chicken) Est. Cost: .99
6 corn tortillas (30 ct package is $.99 this week!) Est. Cost: .18
1/2 can cream of chicken soup Est. Cost .50
1/2 can cream of mushroom soup Est. Cost: .50
1/2 jar salsa Est. Cost .75
1/2 onion (on sale for .48/lb) Est Cost .25
1/4 cup shredded cheddar cheese Est. Cost: .75
Total estimated cost $3.92
For an easy side dish, I would serve Mexican Rice (Rice A Roni is on sale for .99)
If you have leftovers, you might try a Spanish Wrap for breakfast the next day. Fill tortillas with scrambled eggs, leftover rice, shredded hashbrowns and a little cheese. Heat and serve as a breakfast burrito. Yum!

Boneless, Skinless Chicken ($1.44/lb after coupon!!)
Fresh Rosemary plants can be found in the floral dept for $1.95
Crispy Rosemary Chicken
(recipe adapted from Chicken under a Brick- Redbook magazine)
Heat oven to 450. Season 4 chicken breasts with salt, pepper, and fresh rosemary. Squeeze fresh lemon over both sides. Heat oven safe skillet over medium high heat and coat with olive oil- add chicken breast and reduce heat to medium. Place a smaller skillet on top of breast and cook about 20 min. until skin is golden. Flip chicken and bake in oven for 15-20 min.
Serve with Onions Baked with Rosemary and Cream
Cost Breakdown:
Chicken Breast $2.88
Onions $2
Heavy Cream $.50
Final Price: $5.38

Here are a few options based upon the great sale on boneless, skinless chicken breast at Safeway ($1.74/lb after coupon). Click here for a complete list of deals for this week.
Use approx 1 lb of chicken, cubed $1.74
1/2 carrots ($1/lb) .50
1/2 cup cucumber $1.38 ( I would serve extra cucumber on the side with red wine vinegar or just a little salt and pepper)
1/4 cup feta (on sale for $1 after coupon) .50
1/4 cup olives (.99/can) .50
Italian style salad dressing (Ken’s salad dressing is $1 after coupon) .25
Final Price: $4.86 total
If you want to serve this on a bed of lettuce, Iceberg is .99 a head this week.
Second option:
BBQ Grilled Chicken (marinade in Kraft BBQ sauce that is free after coupon this week)
2lbs= $3.48
Serve with Grilled Pineapple
Pineapple $2.49 after coupon ($1.24 to serve 4)

Final Price: $5.31
For dessert there is Betty Crocker brownie mix on sale for .79, which can be served with Breyer’s Ice Cream ($1.75 after coupon) or drizzled with Smucker’s Caramel Sauce (1.94 after coupon).

Here is my Bargain Meal of the Week featuring this week’s Safeway Deals.
I thought I’d feature slow cooker recipes since it is HOT here and the last thing I want to do is turn on the oven!
Slow Cooker Italian Beef Sandwiches (4 servings)
Pot Roast is on sale for $1.29 this week- 2 lbs = $2.58
Hamburger or Hot Dog buns are .89 for 6 = .56
Italian Salad dressing seasoning- approx. .50
Serve with Baked Potato .69/lb = $1.38 (This can also be done in the slow cooker!)
Final Cost: $5.02 (WOW!)
Since I am a vegetarian I will be eating the baked potato topped with Athenos feta cheese, which is on sale for $1 after coupon this week!

I thought this looked really delicious! I hope you stocked up on chicken last week when it was $1.69/lb- otherwise this week boneless, skinless chicken is $2.49/lb and there is a $1/1 coupon Safeway coupon, making it $2.24/lb. Kraft shredded cheese is .99 after coupon.
GARLIC CHEDDAR CHICKEN
Chicken $4.48 (or $3.38 if you stocked up last week)
Cheese .99
Serve with Rice a Roni .66 after coupon
Final Price: $6.13 or $5.03
Here is another budget friendly idea:
80% Lean Ground Beef- $2.00 ($1.47/lb this week)
Onions 10/$10- $.50
Peppers .99/lb- $.49
Cheese .49 (I would substitute mozzarella for the provolone)
Buns $1.00
Serve with Fresh Express Salad $1.00
Final Price: $5.48

Here is my Bargain Meal of the Week featuring these deals from Safeway:
We have to feature chicken since $1.69 is such a great price for boneless, skinless chicken breasts. This recipe is a standby for us and is super easy to toss in the crock pot or you can easily adapt it for the grill.
BBQ Beer Chicken::
I place 2-4 chicken breast in the crockpot with a mixture of BBQ sauce (approximately 1 1/2 cups) and half a beer. This can cook on low for about 4 hours or high for about 2 hours.
Serve with grilled corn on the cob (or to make it more decadent serve with Bacon Wrapped Corn on the Cob).
Cost Breakdown:
4 Corn on the Cob @ .40= $1.60
Chicken Breast= $2.78
BBQ Sauce= $.50 (Kraft is priced at $2.25 this week, use $1/1 coupon from the blue toolbar to the right)
Beer= $.70 (1 can beer approx depending on type of beer purchased, I would use Coors or Budweiser)
Total: $5.58
Another idea would be a Monte Cristo sandwich using the great price on bread and Butcher’s Deli Ham-
White Bread .99 a loaf
Butcher’s Ham .99 (with Safeway coupon)
Primo Taglio Swiss Cheese $2.99/lb (with in ad coupon)
(Turkey is optional)
You can also serve with cranberry sauce or a raspberry jam.
