Here is the Bargain Meal of the Week featuring Safeway deals. I decided to use the great sale on Pork Loin Chops this week.

Apples are also .68/lb this week. The Cracker Barrel Fried Apple Recipe HERE sounds delicious and would be great after this Pork!

Bargain Meal of the Week: Safeway Deals

There is a pretty good deal on chicken this week (.79/lb) and Cara Mia marinated artichokes are $1.
.
An idea for a meal idea with these items would be Chicken, Artichoke, and Parmesan Sandwiches.
.
This recipe calls for chicken breast, but I think it can be easily modified to use whole chicken that is roasted instead of breaded.
.
I would serve with a side salad with black olives and Italian dressing. Bagged salads are on sale for .45 after coupon this week! See the list of Safeway deals right HERE.

Here is my Bargain Meal of the Week ideas featuring the Safeway deals HERE. Since 4lbs of carrots are just $1.99 this week- I wanted to come up with new ideas to use them up!

Carrot Souffle
Use 2lbs carrots $.99
3 eggs .37
1/2 cup margarine .49
Total: $1.85
Might be a good time to practice because this sounds like a great holiday item!

Carrot Soup
1 1/2 cups vegetable broth .99
1 cup half and half (I would substitute for milk) .50
2 1/2 cups carrots .49
Total: $1.98
Don’t forget the $1 off Artisan bread printable which should net .99 French bread.

Bargain Meal of the Week: Safeway

Here is the Bargain Meal of the Week featuring Safeway deals. I had to feature something with bacon since there are 2 free packages of Smithfield Bacon this week after coupon. You can also get 10lbs of Russet Potatoes for $1.49 this week and Boneless Chicken Breast for $1.69/lb. Usually my recipes are a bit lighter but since we are talking bacon here I figured you might as well go for it.

Smothered Bacon Wrapped Chicken

Cost Breakdown:

Bacon: FREE
Potatoes: $.50
Chicken Breast: $3.00
8 oz. sour cream: .99
Mushroom soup: .50

Grand Total: $4.99 for 4 people!

Bargain Meal of the Week: Safeway Deals

There are quite a few great deals at Safeway this week (see the complete list HERE) so I have a few different menu ideas. All menus should feed 4 people for around $5.

Spicy Mary Burgers (from Safeway)
80% Lean Ground Beef $1.99/lb = $2.48
I think you can get the same results by omitting the dried tomatoes and using a single serving of V-8 Tomato juice= .99
4 Buns= $1.00
Serve with Grilled Sweet Corn . 16 each = .64

Final Price: $5.11

Bacon Ranch Quesadillas
Use Mission Toritillas on sale for .99- 10 ct = .40
Mozzarella Cheese 1 cup= .99
1/2 cup crumbled bacon $2.99 each = .99
Tomato .99/lb= .30
Marie’s Ranch Dressing = FREE after coupon

I would serve with a simple spinach salad (Fress Express $1 this week) with a little more bacon and tomato and ranch dressing.

Final Price: $3.68

Bargain Meal of the Week: Safeway Deals

Here is my Bargain Meal of the Week featuring the best deals at Safeway this week.

Since Broccoli is .88/lb here is a quick and easy way to prepare yours:

Broccoli in Roasted Chicken Drippings

1 Head of Broccoli .88
Garlic .33

Try it with Roast Sticky Chicken Rotisserie Style since whole chicken is .99/lb this week.
This needs to cook on low for a long time so save this one for the weekend.
4lbs Chicken $3.96

Total for 4 people: $5.17 and you should have leftovers!

Bargain Meal of the Week: Spicy Chicken Legs

Since the deals at Safeway are slim this week I thought I’d focus on the chicken legs which are .77/lb. Check out my menu below for 4 people spending $5 or less total.

Spicy Chicken Legs - this recipe calls for several items from the pnatry that you probably got for free or for very cheap using coupons. Even better, this recipe can be made in the crockpot!

8 Drumsticks (3lbs approx) $2.31
1/2 cup blue cheese dressing (Marzetti is on sale for $1.25 after coupon this week)

I would serve with a wedge of iceburg lettuce (.99/ head) with blue cheese drizzled on top.

Grand Total: $4.55

Bargain Meal of the Week: Meat Lovers and Veggie edition

Well this week I am featuring a Bargain Meal idea for meat eaters and another in honor of vegetarians (like me!)

Summertime Mango Salsa Chicken:

4 chicken breasts $1.99/lb this week= $2.98
1 fresh mango $1
1/2 red onion .30
1/2 green pepper .40
1 fresh red chile pepper .50

To keep things light I would serve this with sliced cucumbers with red wine vinegar drizzled on top.

Total: $5.18

Veggie Option:

Eggplant Con Queso (this is a little heavy for warm weather but looks so good!)

1 Eggplant $1
1 cup shredded cheddar .99
1 cup diced toasted bread .25
1/2 cup heavy cream .99

Some reviewers also added salsa.

Total Price: $3.23 (the veggies have enough in the budget for dessert!)

Bargain Meal of the Week: Grilled Pork

Here is my Bargain Meal of the Week featuring this week’s Safeway deals. In honor of 4th of July, I thought I’d post an easy menu for the BBQ. This week I wanted to use the great pork shoulder that is on sale for .99/lb at Safeway.

This recipe calls for a lot of items from the pantry and can be cooked on the grill or in the oven at a very low heat for several hours. Any leftovers would probably make delicious sandwiches the next day, so you might want to grab the Hamburger buns that are on sale for .79.

Marinated Pork Shoulder
4lbs pork (to feed 4 people generous helpings) $3.96
(1) onion .40

I would serve this with grilled corn on the cob with garlic butter- corn on the cob $.40 each

Total for 4 people: $5.96

Here is the Bargain Meal of the Week featuring the hot deal on tortillas this week at Safeway!

Chicken Tortilla Casserole
1 Cup chopped chicken (bone-in chicken is .99/lb this week, click here for easy instructions on how to work with bone-in chicken) Est. Cost: .99
6 corn tortillas (30 ct package is $.99 this week!) Est. Cost: .18
1/2 can cream of chicken soup Est. Cost .50
1/2 can cream of mushroom soup Est. Cost: .50
1/2 jar salsa Est. Cost .75
1/2 onion (on sale for .48/lb) Est Cost .25
1/4 cup shredded cheddar cheese Est. Cost: .75

Total estimated cost $3.92

For an easy side dish, I would serve Mexican Rice (Rice A Roni is on sale for .99)

If you have leftovers, you might try a Spanish Wrap for breakfast the next day. Fill tortillas with scrambled eggs, leftover rice, shredded hashbrowns and a little cheese. Heat and serve as a breakfast burrito. Yum!
