I have a really fun and very simple summer treat for you today. When I was a kid, my mom loved root beer floats and we had a restaurant right by our house that specialized in them. We used to go all summer to get floats and sit outside on a warm summer night just savoring that sweet and frothy treat.
My children absolutely love root beer floats just as much as I did. We like to mix Regular A&W® with vanilla ice cream and it just brings back such great memories of my own childhood. Life was a bit slower when I was a kid and I love sharing memories of those simple pleasures with my own family.
I was in charge of treats for my little girl’s soccer team swim party recently and had to make something for adults and kids to enjoy. I was trying to think of what would be perfect for summer- not too sweet, not too sticky. Something that would be refreshing after a hot practice and something classic that would scream summertime fun. I was going through all sorts of ideas and then it hit me that a Root Beer float would be absolutely perfect! Adults love them, kids love them and they are perfect for summer because it is such a no fuss dessert.
This year I decided to try a little twist on the traditional float by making ice pops for the kids to enjoy. For the adults, I made a more traditional float but decided to change it up a little with different varieties of soda.
There are so many fun flavor combinations but I went with Regular A&W®, Regular Sunkist® and Dr Pepper® Cherry. Yum, right?
To make these couldn’t be simpler. I purchased the little mini cans of A&W® Root Beer and Sunkist® and those were a perfect size.
I tried a few different versions of these ice pops- first just layering the soda and ice cream. What I found is that you get an almost slushie like consistency to the pops and I was looking for more creaminess.
So I discovered that by blending the ice cream and root beer just for a few seconds, they integrated together nicely and the pops came out really creamy and delicious.
- (2) 7.5oz Mini Cans Soda of your choice ( I used Regular A&W® and Sunkist® and Dr Pepper® Cherry)
- 2 Generous tablespoon size scoops of vanilla ice cream (I used Archer Farms Ice-Cream)
- Place ice cream in blender and add soda.
- Blend for about 10-20 seconds until creamy.
- Careful not to overblend or the mixture gets too frothy.
This recipe makes 6 ice pops. Slowly pour into your ice pop mold and put in the freezer for a few hours. Gently wiggle the lid back and forth to remove.
